Preparation

  • Marinade whole chicken with sea salt and set aside for 20 mins.

  • Boil a pot of water over medium heat and when it boils, immerse chicken and wait for water to boil again. Turn off heat after water boils and leave chicken to poach in the water for 45 min to 1 hour.

  • After an hour, soak chicken in ice water.

  • Heat up sesame oil in a pot over medium heat, add in ginger slices and stir fry till it becomes fragrant. Add in rice, McCormick® Minced Garlic and Onion, pandan leaves, chicken stock and sea salt.

  • Stir the mixture well and transfer to a steamer for 30 to 45 mins till rice is cooked.

  • Add McCormick® Crushed Red Pepper, Minced Garlic, lemon juice, sugar and sea salt in a bowl and mix well into a sauce.

  • Chop up chicken by parts and serve with rice together with the red pepper sauce.
