Coffee Pork Ribs (or Chicken)

Coated in aromatic sweet and savoury coffee sauce, these ribs are crispy on the outside and tender on the inside.

  • For the Marinade
  • 500 g Pork Ribs (or Chicken Drumlets)
  • 1 tsp or 3g Salt
  • 1 tsp or 3g Sugar
  • 4 tbsp or 60g Oyster Sauce
  • 2 tsp or 6g Sesame Oil
  • 1 tsp or 3g Baking Soda
  • 2 tbsp or 20g Rice flour
  • 3 tbsp or 30g Potato Starch
  • 1 Egg
  • For the Glaze
  • 1/3 cup or 80g, McCormick® Grill Mates® Brown Sugar BBQ Sauce
  • 2 tsp or 7g, McCormick® Minced Garlic
  • 1 tbsp or 12g 3-in-1 Instant Coffee Powder
  • 2 tbsp or 30g Water
  • Spring Onion for Garnish (as needed)

  • Mix all the marinade ingredients together and marinate the pork ribs or chicken drumlets for 15 minutes.

  • Combine the McCormick Grill Mates Brown Sugar BBQ Sauce, McCormick Minced Garlic, instant coffee powder and water in a small saucepan and heat over low heat until the coffee powder dissolves. Set aside this glaze.

  • Deep fry the ribs or drumlets at 175°C for 10 minutes, until dark brown or until internal temperature of 75°C.

  • Remove the meat from the fryer and toss with the glaze evenly. Garnish with chopped spring onions and serve.
