Preparation

  • To make marinade,mix lemon juice,olive oil,chili,cumin,garlic,oregano and salt in a small bowl. Place shrimp in a large resealable plastic bag or glass dish. Add marinade and toss to coat.

  • Refrigerate for 15 minutes. Remove shrimp from marinade. Discard any remaining marinade. Alternately thread shrimp and Vegetable onto skewers.

  • Broil or grill over medium heat for 7 to 8 minutes and turn occasionally until shrimp turns pink and Vegetable are tender-crisp.
