GRILLED CHICKEN SKEWERS

Marinated chicken cubes are skewered and grilled and finally drizzled with a homemade Thai Chili Sauce to make a tantalising dish.

Preparation

  • In a small bowl, combine all ingredients for the Marinade and stir till all raw sugar dissolves.

  • Cut the boneless chicken thigh into cubes to skewer later.

  • Combine both the chicken cubes and marinade in a large bowl and toss them until every piece of meat is evenly coated in marinade.

  • Cover tightly bowl with plastic wrap and refrigerate for at least 4 hours, up to 36 hours.

  • Thread chicken cubes onto skewers, about 3 pieces on one skewer.

  • In another bowl, combine all ingredients for the Sauce and stir till all raw sugar dissolves.

  • Pan grill chicken skewers till cooked, and drizzle sauce all over to serve. Sauce can also be served as a dip.
