  • Boil a pot of water with Shaoxing wine, ginger slices, spring onion and McCormick® Sea Salt.

  • When water boils, add chicken meat into the pot and continue to boil under medium heat for 20 to 30 mins.

  • Prepare an ice bath, transfer chicken into it once it is cooked.

  • Heat up oil on a frying pan and gather the ingredients for sauce in a bowl, excluding light soy sauce, dark soy sauce and dark vinegar.

  • Pour hot oil into the bowl, then season with the remaining ingredients.

  • Remove chicken from ice bath, tap dry and slice it. Place the chicken slices on a plate and pour sauce over.

  • Garnish with coriander leaf to serve.
