  • 585 g seafood stock
  • 60 g yellow onion (chopped)
  • 1/2 red capsicum (diced)
  • 1 fresh tomato (diced)
  • 100 g frozen peas
  • 660 g short grain rice
  • 160 g chorizo sausage (sliced)
  • 450 g large shrimp
  • 450 g mussel
  • 450 g clam
  • 3 cloves garlic
  • 4 tbsps olive oil
  • 1/4 tbsp salt
  • 1 stick Singles Spanish Paprika Ground
  • 1/2 tsp McCormick® Coarse Ground Black Pepper

Preparation

  • Heat up a large cast iron pan and add in olive oil. Pour in onion, capsicum and garlic. Sauté till fragrant over low heat. Next, pour in chorizo sausage and sauté. Once it is lightly charred, pour in diced tomato and frozen peas and fry till they soften.

  • Pour in rice and stock and season the rice with 1 stick of McCormick® Singles Spanish Paprika Ground, salt and black pepper. Stir and ensure seasoning are mixed well with rice.

  • Cover the rice mixture with a lid and allow it to cook for 20 mins. After 20 mins, remove the lid and lay seafood over the top of the rice. Cover the rice mixture and let it cook for another 10mins.

  • Once the rice and seafood are cooked, garnish it with parsley and it is ready to be served.
