TURMERIC PINEAPPLE FRIED RICE

A combination of savory flavor and a touch of sweetness from the juicy pineapples - an easy stir-fry recipe for a quick meal. Serve it in a fresh pineapple for an exotic touch!

  • 4 tbsps cooking oil
  • 2 eggs (beaten)
  • 80 g fresh pineapple (cubed)
  • 80 g red bell pepper (cubed)
  • 1 kg overnight cooked rice
  • 50 g spring onion(diced)
  • 2 cloves garlic (chopped)
  • 100 g cashew nuts (roasted)
  • 1 stick Singles Turmeric Ground
  • 2 tbsps fish sauce
  • 1 tsp salt
  • 1/2 stick Singles White Pepper Ground
  • 50 g chicken floss (garnish)

Preparation

  • Prepare a wok over high flame, add in oil and wait till smoke is visible. Once oil is heated, add in garlic and sauté till fragrant. Add in bell pepper and pineapple next and sauté till they are lightly charred.

  • Pour in beaten eggs, stir till egg is cooked and fragrant. At this stage, pour in overnight cooked rice and use the bottom of the ladle to lightly press and toss. Toss your wok and fry for 30 - 40 seconds. After tossing rice, pour in chopped spring onion and cashew nuts. Do a quick toss for 10 - 20 seconds.

  • Next, season your rice with 1 stick of McCormick® Singles Turmeric Ground, salt, fish sauce and ground white pepper. Scoop and toss the rice, ingredients and seasoning to ensure it is evenly mixed. Toss for 30 - 40 seconds over high flame.

  • Serve your cooked turmeric pineapple fried rice in a large bowl or on a fresh pineapple and garnish with chicken floss (optional).
