Preparation

  • Marinate pork trotter with McCormick® Sea Salt and dark soy sauce. Allow it to chill for 8 - 24 hours

  • Heat up a pot big enough to contain pork trotter. Add in oil, ginger, spring onion and sauté till its fragrant.

  • Once fragrant, add in star anise, McCormick® Whole Cloves & McCormick® Cinnamon Stick and stir fry for 30 seconds. Add in pork trotter and fry each side till light golden brown.

  • After frying evenly on both sides, add in McCormick® Ground White Pepper, McCormick® Garlic & Onion Powder onto the pork trotter.

  • Pour in Shaoxing wine, soy sauce, dark soy sauce and 2 liters of water into the pot just enough to cover the pork trotter. Stir and allow it to boil.

  • Lower fire to simmer and let it cook for 1.5 – 2 hours (depending on the size of pork trotter).

  • Once meat has softened, remove it from the pot. Take a cup of braised liquid thickened with corn starch and pour over pork trotter. It’s now ready to be served.
